A healthier version of a peach pie and tastes just like one with out the pie crust. Our fresh peaches baked with brown sugar, butter, and a dash of cinnamon . Serve these delicious, yummy delights with a warm with a scoop of vanilla ice cream, but they are also very good with Greek yogurt drizzled with honey.
Cut 2 peaches or Nectarines in half. Take out pit.
Place halves in a glass baking dish
Mix 2 Tbsp melted butter
1/4 tsp cinnamon
1/2 cup oatmeal
2 Tbsp desired sweetener, to taste
Mix well and fill peach halves.
- Preheat the oven to 375 degrees.
- Place the peaches cut-side up in a baking dish. Fill each peach cavity with a bit of butter, brown sugar, and a dash of cinnamon. Pour enough water in the bottom of the pan to come ½ inch up the side of the pan.
- Bake 35 to 40 minutes, until the flesh has softened and the tops are browned.
- Serve warm, with the toppings of your choice.
Variations: Replace mixture and use ricotta.
